Ingredients Needed:

Pantry – Refried beans, taco size flour tortillas, can of red enchilada sauce

Seasoning – Cumin, chili powder

Dairy – Cheddar cheese, sour cream

How to Make Bean & Cheese Enchiladas

Start by combining your beans, 8 oz. of cheese, cumin, and chili powder in a small bowl.

Then, combine all of your sauce ingredients into another bowl. This included your red enchilada sauce, sour cream, cumin, and chili powder.

Next, in a 9×13 pan, layer a small amount of your enchilada sauce into the bottom of your dish.

Then, spoon a small amount of your bean mixture into each of your 8 tortillas.

After that, roll each tortilla up and place each of them seam side down into your baking dish and top with your remaining cheddar cheese and enchilada sauce.

Finally, bake at 400 degrees for 30 minutes and enjoy! I’m excited for you to try this one!

This Bean & Cheese Enchilada Recipe has a delicious creamy enchilada sauce that's to die for!

Ingredients

Enchiladas

  • 1 Can Refried Beans
  • 8 oz. Bag of Cheddar Cheese
  • 1 tsp. Cumin
  • 1/2 tsp. Chili Powder
  • 8 Soft Taco Size Flour Tortillas (8")

Enchilada Sauce

  • 19 oz. Can Red Enchilada Sauce
  • 1/2 Cup. Sour Cream
  • 1/2 tsp. Cumin
  • 1/4 tsp. Chili Powder

Instructions

  1. In one bowl combine the Beans, 8 oz of Cheese, Cumin & Chili Powder.
  2. In another bowl combine the Sauce Ingredients.
  3. In a 9x13 Pan layer a small amount of the Enchilada Sauce in the bottom of your Baking Dish.
  4. Spoon a small amount of the Bean Mixture into each Tortilla.
  5. Roll Up and place seam side down in the pan.
  6. Top with all of the Remaining Sauce and Cheese.
  7. Bake at 400 Degrees for 30 Minutes.
