This is one of my favorite Sheet Pan recipes! It’s so simple to throw together or even prepare the night before to have ready for the next day! If you have busy nights like me, it’s so easy to have an easy recipe like this ready to go! It’s low carb and so delicious!

This Cajun Chicken Sheet Pan Recipe Is:

Ingredients Needed:

Produce – Squash, Zucchini, Grape Tomatoes, Orange Bell Pepper

Seasonings – Cajun Seasoning, Garlic Powder, Black Pepper, Onion Powder, Onion Powder, Paprika

Olive Oil

Chicken Breast – You can prep your chicken the night before and leave it in the fridge until ready to make this dish! So simple!

Rice – I love to serve this dish over rice, but you can make it without it for a low carb option!

How To Make Cajun Chicken and Vegetables

This is a visual walk through for readers. The full recipe can be found on the recipe card located at the bottom of this post.

Begin by cutting your Chicken Breast into 1 inch pieces. Place your Chicken pieces in a Ziploc bag and add in your Olive Oil, Cajun Seasoning, Garlic Powder, Salt, Black Pepper, Onion Powder, and Paprika.

Close the bag and shake until all Chicken is fully coated with the marinade.

Next, add in the Grape Tomatoes, Bell Pepper, Zucchini, and Squash. Toss again.

Dump the entire contents on a greased Sheet Pan. Bake at 400 F for 20-25 minutes. Stir and bake for another 15 minutes or until the Chicken reaches an internal temperature of 165 F.

Serve over rice or alone for a low carb option.

Prep Ahead Instructions

This is a great recipe to prepare beforehand. Perfect for a week where you know you’re going to have busy nights!

Start by putting your Chicken Breast pieces in a Ziploc bag. Add in the Olive Oil, Cajun Seasoning, Garlic Powder, Salt, Black Pepper, Onion Powder, and Paprika. Close the bag and shake to toss until everything is evenly coated.

Add in Grape Tomatoes, Bell Pepper, Zucchini & Squash. Seal the bag and store in the refrigerator until ready to cook.

This Low Carb Chicken Dinner is so easy to throw together on busy weeknights! Full of fresh ingredients with a bit of a Cajun kick to it!

Ingredients

  • 2 lbs. Boneless Skinless Chicken Breasts, cut into bite sized pieces
  • 1/4 Cup Olive Oil
  • 2 Tbsp. Cajun Seasoning
  • 2 tsp. Garlic Powder
  • 1 tsp. Black Pepper
  • 1 tsp. Onion Powder
  • 1 tsp. Paprika
  • 16 oz. Grape Tomatoes
  • 1 Orange Bell Pepper, Diced
  • 1 Zucchini
  • 1 Squash
  • 2 Cups of Rice, cooked according to package directions

Instructions

  1. In a Large Ziploc Bag, combine the Chicken Breast pieces, Olive Oil, Cajun Seasoning, Garlic Powder, Black Pepper, Onion Powder, and Paprika. Close the bag and shake to toss until all contents are evenly coated with the marinade.
  2. Add in the Grape Tomatoes, Bell Pepper, Zucchini, and Squash and toss again.
  3. Dump the entire contents on the bag onto a greased Sheet Pan and bake at 400 F for 20-25 minutes, or until the Chicken reaches an internal temperature of 165 F.
  4. While your Chicken is cooking, cook your rice according to package directions
  5. Serve over cooked Rice or alone for a low-carb option.

Notes

To Prep-Ahead, combine the Chicken Breast pieces, Olive Oil, Cajun Seasoning, Garlic Powder, Salt, Black Pepper, Onion Powder, and Paprika in a large Ziploc bag. Close the bag and shake to toss until everything is evenly coated. Add in Grape Tomatoes, Bell Pepper, Zucchini & Squash. Seal the bag and store in the refrigerator until ready to cook.
