Produce – Zucchini, yellow squash, red bell pepper, fresh broccoli, minced garlic
Pantry – Olive Oil
Seasoning – Salt, pepper, chili powder, paprika, onion powder
How to Make Cajun Chicken & Veggies Foil Packs
Start by combining your chicken pieces, olive oil, zucchini, squash, bell pepper, broccoli, minced garlic, salt, pepper, chili powder, paprika, and onion powder in a large bowl and setting it inside the refrigerator for 30 minutes.
Next, spoon your chicken and vegetable mixture into large pieces of aluminum foil and fold the foil over the mixture in order to create a packet.
Finally, place your foil packs on a cooking sheet to bake and cook at 450° F for 25-30 Minutes until chicken reaches an internal temperature of 160° F. Enjoy!
Prep-Ahead Instructions:
In a Large Ziploc Bag combine the Chicken Pieces, Olive Oil, Zucchini, Squash, Bell Pepper, Broccoli, Minced Garlic, Salt, Pepper, Chili Powder, Paprika, and Onion Powder. Seal tightly and mix everything together. Set in the refrigerator for 30 minutes or until ready to cook.

This simple yet flavorful chicken and vegetable combination is a recipe you'll want to try if you love to eat whole foods! These Cajun Chicken & Veggie Foil Packs are individually wrapped and are super easy to serve!
Ingredients
- 3 lbs. Chicken Breast, Cut into 1" Pieces
- 1/4 Cup Olive Oil
- 1 Medium Zucchini, Sliced
- 1 Medium Yellow Squash, Sliced
- 1 Red Bell Pepper, Sliced
- 12 oz. Fresh Broccoli, Cut in Pieces
- 2 tsp. Minced Garlic
- 1 tsp. Salt
- 1 tsp Pepper
- 1 tsp. Chili Powder
- 1 tsp. Paprika
- 1 tsp. Onion Powder
- Heavy Duty Foil
Instructions
- In a Large Bowl combine the Chicken Pieces, Olive Oil, Zucchini, Squash, Bell Pepper, Broccoli, Minced Garlic, Salt, Pepper, Chili Powder, Paprika, and Onion Powder. Mix everything together. Set in the refrigerator for 30 minutes or until ready to cook.
- Cut 6 Large Pieces of Heavy Duty Aluminum Foil. Spoon Chicken and Vegetable mixture onto half of each piece of foil. Fold over the foil and then crimp the ends to create a packet.
- Place foil packs on a baking sheet to bake and cook at 450° F for 25-30 Minutes until the chicken reaches an internal temperature of 160° F.
