Ingredients Needed:

Meat – Chicken breast

Pantry – Lasagna noodles, flour, chicken broth

Dairy – Heavy cream, butter, mozzarella cheese, cheddar cheese

Produce – Red onion, red bell pepper, Roma tomato, minced garlic

Seasoning – Salt, pepper

How to Make Cheesy Chicken Lasagna Roll Ups

Start by pre-cooking your chicken breast for 45 minutes at 350 degrees if you’re using un-cooked chicken, or you can use rotisserie chicken.

Then, you’ll saute your butter, red onion, red bell pepper, minced garlic, and tomato in a large skillet over medium heat for 3-5 minutes.

Next, add in your flour and stir for around 2-3 minutes until its combined with your remaining butter. You’ll then slowly whisk in your chicken broth a little at a time and bring everything to a boil over medium high heat until your sauce starts to thicken. After it’s thickened, add in your salt, pepper, and heavy cream and mix well.

You’ll then spray a large 9×13 baking dish with cooking spray and place about 1/4 of your sauce at the bottom of the pan.

Then, combine your chicken breast with 16 oz. of your mozzarella cheese and mix well.

Next, you’ll lay your cooked lasagna noodles out flat and fill with 1/12 of the chicken mixture and roll the lasagna noodle up from the short side and place into your baking dish. You’ll repeat 12 times.

Next, pour your remaining sauce over the top of your lasagna roll ups and top with your remaining mozzarella and cheddar cheese.

Finally, bake at 350° F for 35 minutes, or until cheese is bubbly and starting to brown on top. Enjoy! This is a fun one.

Prep-Ahead Instructions

Prepare the Lasagna Roll Ups according to the steps above. When you finish step 8 cover with foil and place in the refrigerator or freezer until ready to bake.

Cooking Instructions

Thaw completely and Bake Uncovered at 350° F for 35 minutes, or until everything is bubbly hot and the cheese is starting to brown on top.

Ingredients

  • 2 lbs. Chicken Breast, Cooked & Shredded
  • 12 Lasagna Noodles, Cooked
  • 4 Tbsp. Butter
  • 1/2 Red Onion, Diced
  • 1/2 Red Bell Pepper, Diced
  • 1 Roma Tomato, Diced
  • 1 tsp. Minced Garlic
  • 5 Tbsp. Flour
  • 4 Cups Chicken Broth
  • 1 tsp. Salt
  • 1 tsp. Black Pepper
  • 1/2 Cup Heavy Cream
  • 24 oz. Mozzarella Cheese
  • 8 oz. Cheddar Cheese
  • Cooking spray

Instructions

  1. Pre-Cook Chicken Breast in the oven for 45 minutes at 350 degrees if using uncooked chicken breast, or use Rotisserie Chicken.
  2. In a Large Skillet heat Butter, Onion, Bell Pepper, Tomato, and Garlic. Saute over medium heat for 3-5 minutes.
  3. Add in Flour and stir another 2-3 Minutes until combined with remaining butter. Slowly whisk in Chicken Broth a little at a time. Bring to a boil and cook over medium-high heat until the sauce starts to thicken.
  4. Add in the Salt, Pepper, and Heavy cream and mix well.
  5. Spray a large 9x13 Baking Dish with cooking spray. Place about 1/4 of the sauce in the bottom of the pan.
  6. In a large bowl combine cooked chicken breast with 2 cups of Mozzarella Cheese and mix well
  7. Lay cooked lasagna noodles out flat and fill with 1/12 of the chicken mixture. Roll the lasagna noodle up from the short side and place into the baking dish. Repeat for all 12 noodles.
  8. Pour the remaining sauce over the top of the Lasagna roll-ups and top with remaining Mozzarella and Cheddar Cheese.
  9. Bake at 350° F for 35 minutes, or until cheese is bubbly and starting to brown on top.
