A simple and easy weeknight dinner the whole family can devour. Plus even picky eaters might be asking for another serving. Pair with your favorite sides and ring the dinner bell.

How to Make Chili Tater Tot Casserole

Start by cooking ground beef and add your onions cooking over medium-high heat. You want to make sure the meat is fully cooked. Drain and remove grease.
Next add in the diced tomatoes, beans, Rotel, cream cheese seasonings, and stir well.

Spray down pan and then add the meat mixture in the pan. Then add cheese, and top with the frozen tater tots.

Bake as directed, and top with additional cheese and green onions.
Meal Prep Ahead Of Time
Looking for a meal prep dish? If so this recipe is a great one. Cook your onion and pepper the same way, and then drain fat.
Add in the spices, Rotel, tomatoes, and cream cheese, and beans. Mix well and place in a bag.
Then when you are ready to eat, pour into casserole, top with shredded cheese and frozen tater tots. Then bake!
Make Into A Freezer Meal
This dish also is a great freezer meal. Cook and assemble the casserole the exact same way. Instead of tossing it in to bake, simply cover tightly with foil. I do 2 layers, then freeze for 2-3 months.
Place in the oven frozen, then heat at 375 until it is warmed through. I tend to cover the dish for the first 30 minutes, then uncover and let the tots then begin to crisp up.

Variations To Recipe
- Swap ground beef with ground turkey, pork, or even ground chicken.
- Instead of Black beans use pinto beans or even a can of chili beans.
- Add a can of corn to the mixture, just drain well before mixing in.
- Make an 8×8 size and freeze the other 8×8 instead of a 9×13 casserole.
- Use a packet of chili seasoning instead of using a blend of your own spices.

Chili Taco Tater Tot Casserole
Chili Taco Tater Tot Casserole is loaded with seasoned ground beef, beans, cheese, and topped with tater tots and baked to golden, crunchy, perfection. A simple and easy twist to tater tot casserole.
Ingredients
- 2 pounds Ground Beef
- 1 Onion, Diced
- 15 ounces Can Diced Tomatoes with Juices
- 15 ounces Can Black Beans, Drained & Rinsed
- 1 10 ounces Can of Rotel, Drained
- 1 Tablespoon Chili Powder
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Onion Powder
- 4 ounces Cream Cheese Softened
- 16 ounces Shredded Cheddar Cheese
- 32 ounces Bag of Tater Tots
- 1 Bunch Green Onions (Optional, for Garnish)
Instructions
Directions:
- In a large skillet cook Ground Beef and Onions 8-10 Minutes over Medium High heat. Until meat is no longer pink. Drain Fat and return to pan.
- Add in Diced Tomatoes, Black Beans, Rotel, Chili Powder, Cumin, Salt, Pepper, Garlic Powder, Onion Powder, and Cream Cheese and stir everything together.
- Spray a 9x13 baking dish with non stick cooking spray. Place the meat mixture on the bottom of the baking dish and top with 3/4 of the Shredded Cheese.
- Layer frozen Tater Tots on top of the meat in a single layer.
- Bake at 375° F. for 30-35 minutes, until the Tater Tots are starting to brown.
- Top with additional cheese and Green Onions and serve.
Prep Ahead Instructions -
- In a large skillet cook Ground Beef and Onions 8-10 Minutes over Medium High heat. Until meat is no longer pink. Drain Fat and return to pan.
- Add in Diced Tomatoes, Black Beans, Rotel, Chili Powder, Cumin, Salt, Pepper, Garlic Powder, Onion Powder, and Cream Cheese and stir everything together.
- Store in a large Ziploc bag or airtight container until ready to bake.
Cooking Instructions -
- Spray a 9x13 baking dish with non-stick cooking spray.
- Place the meat mixture on the bottom of the baking dish and top with 3/4 of the Shredded Cheese.
- Layer frozen Tater Tots on top of the meat in a single layer. Bake at 375° F. for 35-40 minutes.
