These fajitas are a super easy recipe, they taste delicious, and you can even make them low carb by ditching the tortillas.

Ingredients Needed:

Meat – Chicken breast

Seasoning – Chili powder, salt, paprika, onion powder, garlic powder, cayenne powder, cumin

Produce – Onion, yellow bell pepper, red bell pepper, shredded lettuce, tomato

Dairy – Shredded Colby and Monterrey jack cheese, sour cream

Pantry – Olive oil, taco size flour tortillas

Other – Salsa

How to Make Classic Chicken Fajitas

Start by placing the chicken strips in a large gallon size Ziploc bag and adding olive oil, chili powder, salt, paprika, onion powder, garlic powder, cayenne pepper, cumin, and mixing well together.

Next, top your chicken mixture with your onion, yellow and red bell pepper, seal tightly, and place in the refrigerator until you’re ready to start cooking.

Then, place your chicken and vegetable mixture on a large sheet pan, spread evenly, and bake at 375 degrees for about 30-35 minutes.

Finally, serve your fajitas in Tortillas with cheese, lettuce and your favorite toppings!

Prep-Ahead Instructions:

In a Large Gallon Size Ziploc Bag place the Chicken, Olive Oil, Chili Powder, Salt, Paprika, Onion Powder, Garlic Powder, Cayenne Pepper, and Cumin. Seal the bag and mix well. Top the Chicken Mixture with the Onion, Yellow and Red Bell Pepper and then Seal tightly. Place in the refrigerator until ready to cook.

Classic Chicken Fajitas are one of our favorite Mexican meals! They're easy, delicious and can be low carb without the tortillas!

Ingredients

  • 1 1/2 Lbs. Chicken Breast, Sliced into Thin Strips
  • 1/4 Cup Olive Oil
  • 2 tsp. Chili Powder
  • 1 tsp. Salt
  • 1 tsp. Paprika
  • 1/2 tsp. Onion Powder
  • 1/2 tsp. Garlic Powder
  • 1/4 tsp. Cayenne Pepper
  • 1/2 tsp. Cumin
  • 1 Large Onion Sliced Thinly
  • 1 Yellow Bell Pepper
  • 1 Red Bell Pepper
  • 4 oz. Shredded Lettuce
  • 8 oz. Shredded Colby & Monterey Jack Cheese
  • 1 Tomato, Diced
  • 4 oz. Sour Cream
  • 4 oz. Salsa
  • 8 Soft Taco Size Flour Tortillas

Instructions

  1. Place Chicken Strips in a Large Gallon Size Ziploc Bag.
  2. Add Olive Oil, Chili Powder, Salt, Paprika, Onion Powder, Garlic Powder, Cayenne Pepper, and Cumin. Seal the bag and mix well.
  3. Top the Chicken Mixture with the Onion, Yellow and Red Bell Pepper and then Seal tightly. Place in the refrigerator until ready to cook.
  4. Place the Chicken and Vegetable Mixture on a large sheet pan and spread evenly.
  5. Bake at 375 Degrees for about 30-35 minutes (Stir halfway through).
  6. Serve in Tortillas with cheese, lettuce, tomato, sour cream and salsa or your favorite toppings!

Notes

For a low carb option, place your chicken mixture over greens and add your favorite low carb toppings!

Prep Ahead Instructions -
Place Chicken Strips in a Large Gallon Size Ziploc Bag. Add Olive Oil, Chili Powder, Salt, Paprika, Onion Powder, Garlic Powder, Cayenne Pepper, and Cumin. Seal the bag and mix well. Top the Chicken Mixture with the Onion, Yellow and Red Bell Pepper and then Seal tightly. Place in the refrigerator until ready to cook.

Cooking Instructions -
Dump the chicken and vegetables on a Large Sheet Pan and spread everything out evenly! Bake at 375° F for 30-35 minutes (I like to stir everything about half way) Serve with your favorite toppings!
