Ingredients Needed:

Shrimp – raw shrimp, peeled and deveined

Seasoning – Paprika, salt, pepper

Produce – Zucchini, yellow squash, red onion, fresh parsley, minced garlic

Pantry – Olive oil, heavy duty foil

How to Make Garlic Shrimp and Veggie Foil Packs

Start by combining your shrimp, zucchini, squash, onion, olive oil, paprika, salt, pepper, and minced garlic in a large bowl and mixing everything together.

The, cut 4 large pieces of heavy duty foil, spoon 1/4 of the shrimp and vegetable mix onto each half of the foil, and then fold your foil in half and tightly roll the edges to create a foil packet.

Finally, place your foil packets on a large baking sheet and bake at 400 degrees for 20 minutes. You can garnish with fresh parsley if you’d like. Enjoy!

How Do I Cook This Recipe on the Grill?

I chose to make this recipe in my oven, but, if you’d like to grill them, it’s super easy. You’ll just place the foil packs on the grill and cook for 20 minutes over high heat.

Prep-Ahead Instructions

In a Large Ziploc Bag combine the Shrimp, Zucchini, Squash, Onion, Olive Oil, Paprika, Salt, Pepper, and Minced Garlic. Seal tightly and mix everything together. Store in the refrigerator or freezer until ready to cook.

Cooking Instructions

Thaw completely Spoon 1/4 of the Shrimp and Vegetable Mixture onto half of a large piece of foil. Fold the foil in half then tightly roll the edges to create a foil packet. Repeat for all 4 foil packs. Place foil packs on a Large Baking Sheet and Bake at 400° F for 20 minutes.

Ingredients

  • 16 oz. Raw Shrimp, Peeled and Deveined
  • 2 Medium Zucchini, Cut in 1/4" Slices
  • 2 Medium Yellow Squash, Cut in 1/4" Slices
  • 1 Red Onion, Cut into Quarters and separated
  • 1/4 Cup Olive Oil
  • 1 tsp. Paprika
  • 1 tsp. Salt
  • 1 tsp. Pepper
  • 3 tsp. Minced Garlic
  • 1/4 Cup Fresh Parsley, Chopped
  • Heavy Duty Foil

Instructions

  1. In a Large Bowl combine the Shrimp, Zucchini, Squash, Onion, Olive Oil, Paprika, Salt, Pepper, and Minced Garlic. Stir everything together until well mixed.
  2. Cut 4 Large Pieces of Heavy Duty Foil. Spoon 1/4 of the Shrimp and Vegetable Mixture onto half of each piece of foil. Fold the foil in half then tightly roll the edges to create a foil packet.
  3. Place foil packs on a Large Baking Sheet and Bake at 400° F for 20 minutes. (Optional: You can also place the foil packs on the grill and cook for 20 minutes over High Heat)
  4. Garnish with fresh parsley if desired.
