Produce – Red onion
Pantry – Olive oil, burrito size flour tortillas, green enchilada sauce
Refrigerated – Salsa verde, Mexican style shredded cheese
Seasoning – Paprika
How to Make Smothered Salsa Verde Burritos
Begin by cooking the olive oil and onion for 2-3 minutes in a large skillet over medium-high heat. Then, add in the ground beef and cook until no longer pink (around 7-10 minutes).
Then, stir together salsa verde, enchilada sauce, paprika, and then stir in the ground beef with 1/2 of the sauce mixture.
After, place each tortilla into a baking dish after filling them with 1/8 of the beef mixture and 1 oz. of cheese.
You’ll then stir the remaining enchilada sauce and salsa verde together and pour it over the burritos.
Finally, top with cheese and bake at 375° F for 30 Minutes, until cheese starts to slightly brown on top. Enjoy!

This is a super easy recipe to make ahead of time in order to spend more time with family on those extra busy weeknights!

Ingredients
- 1 1/2 Lbs. Ground Beef
- 1/2 Red Onion, Diced
- 2 Tbsp. Olive Oil
- 10 oz. Green Enchilada Sauce
- 3/4 Cup Salsa Verde
- 1 tsp. Paprika
- 6 - 10" Burrito Size Flour Tortillas
- 16 oz. Mexican Style Shredded Cheese
Instructions
- In a Large Skillet over Medium-High Heat add the olive oil and Onion. Cook for 2-3 Minutes.
- Add in the Ground Beef and cook another 7-10 Minutes until no longer pink. Drain grease from the meat and return to the pan.
- Stir together Salsa Verde, Enchilada Sauce, and Paprika.
- Stir the Ground Beef with 1/2 of the sauce mixture.
- Grease a 9x13 Baking Dish with cooking spray.
- Place Tortillas flat on a plate and fill them with 1/6 of the Beef Mixture + about 1 oz. of Cheese. Fold in each end, then Roll the tortilla up and place in the Baking Dish.
- Repeat filling each of the 6 tortillas, rolling and placing seam side down in the baking dish.
- Pour the remaining Enchilada Sauce, Salsa Verde and Paprika mixture over the burritos.
- Top with the remaining cheese.
- Bake at 375° F for 30 Minutes, until cheese starts to slightly brown on top.
