Ingredients Needed:

Meat – Ground beef

Produce – Red onion

Pantry – Olive oil, burrito size flour tortillas, green enchilada sauce

Refrigerated – Salsa verde, Mexican style shredded cheese

Seasoning – Paprika

How to Make Smothered Salsa Verde Burritos

Begin by cooking the olive oil and onion for 2-3 minutes in a large skillet over medium-high heat. Then, add in the ground beef and cook until no longer pink (around 7-10 minutes).

Then, stir together salsa verde, enchilada sauce, paprika, and then stir in the ground beef with 1/2 of the sauce mixture.

After, place each tortilla into a baking dish after filling them with 1/8 of the beef mixture and 1 oz. of cheese.

You’ll then stir the remaining enchilada sauce and salsa verde together and pour it over the burritos.

Finally, top with cheese and bake at 375° F for 30 Minutes, until cheese starts to slightly brown on top. Enjoy!

Prep-Ahead Instructions:

This is a super easy recipe to make ahead of time in order to spend more time with family on those extra busy weeknights!

Prepare according to the directions and place in the refrigerator before baking in step 8. Store 24-48 hours in the refrigerator before baking.

Ingredients

  • 1 1/2 Lbs. Ground Beef
  • 1/2 Red Onion, Diced
  • 2 Tbsp. Olive Oil
  • 10 oz. Green Enchilada Sauce
  • 3/4 Cup Salsa Verde
  • 1 tsp. Paprika
  • 6 - 10" Burrito Size Flour Tortillas
  • 16 oz. Mexican Style Shredded Cheese

Instructions

  1. In a Large Skillet over Medium-High Heat add the olive oil and Onion. Cook for 2-3 Minutes.
  2. Add in the Ground Beef and cook another 7-10 Minutes until no longer pink. Drain grease from the meat and return to the pan.
  3. Stir together Salsa Verde, Enchilada Sauce, and Paprika.
  4. Stir the Ground Beef with 1/2 of the sauce mixture.
  5. Grease a 9x13 Baking Dish with cooking spray.
  6. Place Tortillas flat on a plate and fill them with 1/6 of the Beef Mixture + about 1 oz. of Cheese. Fold in each end, then Roll the tortilla up and place in the Baking Dish.
  7. Repeat filling each of the 6 tortillas, rolling and placing seam side down in the baking dish.
  8. Pour the remaining Enchilada Sauce, Salsa Verde and Paprika mixture over the burritos.
  9. Top with the remaining cheese.
  10. Bake at 375° F for 30 Minutes, until cheese starts to slightly brown on top.
