Dairy – Shredded Cheese
Pantry – Corn Tortillas, Salt, Pepper
Refrigerated – Salsa
How to Make Breakfast Taquitos
Start by pre-heating your oven to 425 degrees and warm your tortillas on the griddle or skillet so they’ll be easily pliable and you’ll be able to mold them.
Then, scramble your eggs and season with salt and pepper to taste, if desired.
Now, place your tortillas on a full-sized sheet pan and divide your scrambled eggs onto each of your 10 tortillas. Sprinkle your shredded cheese on top of your eggs and place 1 sausage link on top of the egg and cheese.
Then, roll up each tortilla and place each of them seam side down on a baking sheet lined with parchment paper. You’ll spray the sheet lightly with cooking spray and bake for 10-15 minutes or until the taquitos begin to turn golden brown.
Finally, serve with salsa for dipping if desired. Enjoy!
Notes
Make sure you do not skip warming your tortillas up. If they are not warmed up, they won’t be able to fold around the eggs, cheese, and sausage correctly and will tear easily!

These Breakfast Taquitos are perfect when you want Breakfast for Dinner! They're packed with protein and easily customizable with your favorite ingredients.
Ingredients
- 7 oz. Sausage Links
- 6 Large Eggs, scrambled
- 1 1/2 Cups Shredded Cheese
- 10 6" Corn Tortillas
- Salt to Taste
- Pepper to Taste
- Salsa, if desired
Instructions
- Preheat your oven to 425 degrees F. Warm your tortillas on a hot, dry griddle or skillet so they are pliable and can easily be rolled up.
