Ingredients Needed:

Chicken – Boneless, Skinless Chicken Breast

Produce – Lemon Juice, Lemons, Parsley, Minced Garlic

Seasonings – Oregano, Thyme, Salt, Pepper, Onion Powder

Pantry – Olive Oil, Uncle Bens Wild Rice

How to Make Baked Lemon Chicken

You’ll start by combining your chicken breast, olive oil, lemon juice, minced garlic, oregano, thyme, salt, pepper, and onion powder in a large Ziploc bag and placing it in your fridge for for a minimum of 30 minutes.

Now, place all of the contents of your bag in a large 9×13 baking dish and bake, covered, at 400° F for 40 Minutes or until chicken reaches an internal temperature of 160° F.

This next step isn’t necessary, but it will help to give your chicken that golden color. Remove the foil from the pan once the chicken is cooked and place chicken under the broiler for 3-4 minutes to slightly brown the chicken.

Cook your Uncle Bens Wild Rice according to package directions after placing your chicken under the broiler, or after cooking for 40 minutes in your oven.

Finally, serve your chicken over your wild rice and garnish with fresh lemon slices and fresh parsley. Enjoy!

Prep-Ahead Instructions

This chicken recipe is already super simple, but you can save even more time if you know you have a busy week ahead of you by prepping your chicken ahead of time. The instructions are essentially the same, you’ll just keep your chicken in your fridge until your ready to bake it!

Prep Ahead Instructions –

In a large Ziploc Bag combine the Chicken Breast, Olive Oil, Lemon Juice, Minced Garlic, Oregano, Thyme, Salt, Pepper, and Onion Powder. Place in the refrigerator until ready to cook.

Cooking Instructions –

Place all the contents from the bag in a Large 9×13 Baking Dish. Bake Covered at 400° F for 40 Minutes or until chicken reaches an internal temperature of 160° F. (Note: Cooking time may vary depending on the thickness of your chicken)

Instructions

  1. In a large Ziploc Bag combine the Chicken Breast, Olive Oil, Lemon Juice, Minced Garlic, Oregano, Thyme, Salt, Pepper, and Onion Powder. Place in the refrigerator until ready to cook or for a minimum of 30 minutes.

  4. Optional: Remove the foil from the pan once the chicken is cooked and place chicken under the broiler for 3-4 minutes to slightly brown the chicken. This isn't necessary, but it will help to give your chicken that golden color.
  5. Serve over Prepared Wild Rice and garnish with Fresh Lemon Slices and Parsley.
