Ingredients Needed:

Meat – Approx. 6 pieces of boneless pork chops

Seasoning – Salt, black pepper, paprika, fresh thyme

Cheese – Cream cheese, Monterey jack cheese

Refrigerated – Butter

Frozen – Chopped spinach

How to Make Cheesy Spinach Stuffed Pork Chops

Start by thawing and draining the water from the spinach and stirring together the spinach, cream cheese, and Monterrey jack cheese.

Then, make a slit in the center of each pork chop on one side and fill each opening with 1/6 of the cheese mixture.

Next, heat the olive oil in a large oven safe skillet or a Dutch oven and place the pork chops in the skillet after sprinkling them with salt, pepper, and paprika. You’ll want to cook until each side is browned, around 3-4 minutes.

Finally, sprinkle with fresh thyme and place the skillet in the oven at 400° F for 10-12 minutes, until the pork chops reach 145° F Internally. Enjoy!

Prep-Ahead Instructions

Thaw and drain all the water from the spinach, Stir together the Spinach, Softened Cream Cheese and Monterey Jack Cheese. Using a knife make a slit into the center of the pork chops on one side to make a pocket. Fill the opening of each pork chop with 1/6 of the Cheese Mixture. Store in an Airtight Container in the refrigerator until ready to cook. I typically don’t like to do these more than 24 hours in advance.

These Pork Chops stuffed with cream cheese, spinach and Monterey jack cheese will melt in your mouth!

Ingredients

  • 2 lbs. Boneless Pork Chops, (approx. 6 pieces)
  • 3 Tbsp. Olive Oil
  • 4 Tbsp. Butter, softened
  • 12 oz. Frozen, Chopped Spinach (Thawed and Drained)
  • 8 oz. Cream Cheese, softened
  • 8 oz. Monterey Jack Cheese
  • 1 tsp. Salt
  • 1 tsp. Black Pepper
  • 1 tsp. Paprika
  • 1/2 oz. Fresh Thyme

Notes

**Make sure your skillet is oven-safe or you are using a dutch oven! If not you can transfer the pork chops from a regular skillet to a roasting pan/sheet pan to finish cooking. Make sure the pork chops reach 145 degrees!
