How to Make Low Carb Bacon Cheeseburger Casserole
Start by frying your bacon until cooked and setting it aside on a plate covered with paper towels in order to soak up some of the grease.
Then cook the ground beef, onion, and garlic, drain all of the grease from the pan, then stir in your salt, pepper, and cream cheese.
Next, mix your eggs, heavy cream, shredded cheese, mustard, salt, and pepper into a small bowl. You’ll then spread your ground beef to the bottom of a 9×13 baking dish and add the cooked bacon on top.
After adding the bacon, you’ll pour both the egg and cheese mixture onto the top of the bacon and add any additional cheddar cheese on top.
Finally, bake in the oven for 15 minutes at 350° F and enjoy!
Prep-Ahead Instructions
This recipe is a great option to prep-ahead in order to save even more time throughout your busy day.
Simple pre-cook the bacon and ground beef according to the directions and store the bacon and beef mixture in airtight containers in the refrigerator until ready to assemble.

Low Carb Bacon Cheeseburger Casserole
Lose the bun with this Low Carb Bacon Cheeseburger Casserole, but get all the flavors of a traditional cheeseburger! The Bacon, Ground Beef, Cheese, Heavy Cream and spices make this a delicious low carb meal!
Ingredients
- 1 Red Onion, chopped
- 1 tsp. Minced Garlic
- 2 lbs. Ground Beef
- 4 oz. Cream Cheese
- 6 Slices Bacon, diced
- 1/2 tsp. Salt
- 1/2 tsp. Black Pepper
- 3 Eggs
- 4 oz. Heavy Cream
- 1 1/2 cups Shredded Cheddar Cheese
- 1/2 tsp. Salt
- 1/2 tsp. Black Pepper
Instructions
- Fry the bacon until cooked and set aside on a plate covered with paper towels to soak up some of the grease.
- Cook Ground Beef, Onion, and Garlic until no pink remains in your ground beef.
- Drain all grease from the pan, then add 1/4 tsp. salt, 1/4 tsp. pepper and cream cheese to the beef mixture and stir.
- In a bowl, mix eggs, heavy cream, 1 cup of your shredded cheese, salt 1/4 tsp. & 1/4 tsp. pepper.
- Use a 9x13 baking dish and spread the ground beef mixture on the bottom and then add the cooked bacon on top of the ground beef.
- Pour the Egg & Cheese Mixture on top of the bacon.
- Add the remaining 1/2 cup of Shredded Cheddar Cheese on top
- Bake in the oven for 15 minutes at 350° F.
