Ingredients Needed:

Pasta – Package of refrigerated 3 cheese tortellini

Dairy – Butter, whole or 2% milk, heavy whipping cream,

Produce – Garlic cloves, petite diced tomatoes, fresh spinach, fresh basil, chopped fresh oregano

Seasoning – Salt, pepper, onion powder

How to Make This Tortellini Bake

In a skillet you will add your butter and let it melt. Now add in your garlic, flour, onion powder and cook for a minute. Make sure to whisk continuously or it will burn. Now slowly stir in the milk and cream, working out any lumps.

Then, decrease the heat to low, and let it simmer and it will begin to thicken. 

Next, add in the tomatoes, basil, oregano, spinach, and parmesan cheese. Season with salt and pepper. Once the spinach and cheese have melted, remove them from the heat. 

Then, you’ll stir in the cooked tortellini. Mix until fully combined and stir into a casserole dish. Top with parmesan cheese.

Finally, bake the dish until the cheese on top is melted. Remove and serve warm. Enjoy!

Spinach and Tomato Tortellini Bake

This meatless Spinach and Tomato Tortellini Bake is a creamy pasta dish everyone will love!

Ingredients

  • 19 oz. Refrigerated Three Cheese Tortellini
  • 3 Tbsp Butter
  • 3 Garlic Cloves, minced
  • 3 Tbsp Flour
  • 1 tsp Onion Powder
  • 1 1/4 Cups Milk (2% or Whole)
  • 1/2 Cup Heavy Whipping Cream
  • 14 oz. Petite Diced Tomatoes (undrained)
  • 1 1/2 Cups Fresh Spinach, packed
  • 3 Tbsp Fresh Basil
  • 2 tsp Fresh Oregano, chopped
  • Salt to Taste
  • Pepper to Taste
  • 3/4 Cup Finely Shredded Parmesan Cheese, plus 1/2 Cup for top when baking
  • Red Pepper Flakes (optional for garnish)

Instructions

  1. Cook cheese tortellini, drain and set aside.
  2. Melt butter in a large skillet over medium heat. Add garlic, flour and onion powder and cook for one minute, stirring constantly with a whisk. Continue whisking and slowly pour in milk and cream. Wisk until smooth.
  3. Continue stirring constantly (decrease the heat to medium so the milk does not scald) until the mixture begins to barely simmer and thicken.
  4. Add tomatoes oregano, basil, spinach and parmesan cheese. Add salt and pepper to taste.
  5. Cook several minutes longer until the sauce has thickened even more, the spinach is wilted, and the cheese has melted.
  6. Remove from heat and add cooked tortellini into the sauce. Mix together and spoon into a large casserole dish.
  7. Add 1/2 cup of parmesan cheese to the top and bake at 350 degrees F for 8-10 minutes until the cheese on top has melted.

Notes

This can be made ahead and frozen. To make ahead, cook on stove as instructed, but instead of baking at the end, freeze instead. Then, thaw overnight in the refrigerator the night before you want to bake it. Then bake for 30-45 minutes or until completely warm all the way through and cheese on top is melted.
