What Is Fajita Casserole
Fajita casserole is a seasoned chicken breast that gets cooked in the oven along with peppers and onions.
Lighter on carbs and can be served as is. Pair with rice or cauliflower rice, or even with tortillas.
If you are low carb reach for the low carb tortillas to help reduce excess carbs.

Best Chicken to Use
Chicken breast are what I used for this casserole. Now, depending on thickness, you will find that the cook gone is a guide.
Thicker chicken of course takes longer to cook. Whereas chicken tenderloins will cook faster S the meat is thinner.
Just use a meat thermometer to check the internal temperature. You want it to reach 165 degrees.

Storing Leftovers
If you don’t eat it all right away, store any leftovers you have in the fridge in and airtight container.
This dish is served best fresh and hot. If you don’t eat it all store leftovers. Do an airtight container for a couple of days.
The vegetables will mush up a bit once thaws from being frozen.
Can You Double Recipe
Want to make a larger batch? Go right ahead and reach for a larger pan or use mutiple pans.
The biggest thing is to be aware and not overlap the chicken in the pan, or you will find those areas will be cooked a bit different than other areas.
Meal Prepping
This chicken casserole works great for meal prepping for lunches or even dinners down the line. Store in proper containers. Pair with some cauliflower rice, mexi-rice, etc. Then package it up and reheat in the microwave for a quick meal.
We use leftovers as well to shred up and top salads for a Tex-Mex style salad the next night. Therefore if you enjoy eating chicken, you might enjoy making extra to have on hand.

Fajita Chicken Casserole
An Easy Low-Carb Fajita Chicken Casserole that's full of all your favorite flavors! Gluten Free and packed with flavor this is a great recipe the entire family will enjoy!
Ingredients
- 2 lbs. Boneless Skinless Chicken Breast
- 1 Red Bell Pepper, Sliced
- 1 Yellow Bell Pepper, Sliced
- 1 Purple Onion, Sliced
- 1 tsp. Cumin
- 2 tsp. Chili Powder
- 1 tsp. Garlic Powder
- 1 tsp. Paprika
- 2 Tbsp. Olive Oil
- 8 oz. Monterey Jack Cheese
Instructions
- In a small bowl combine Seasonings (Cumin, Chili Powder, Garlic Powder, Paprika).
- Place Chicken Breasts in a 9x13 Baking Dish and sprinkle with seasonings on both sides.
- Drizzle with Olive Oil and top with Onion Slices followed by Bell Peppers.
- Top with Cheese and Bake at 400° for 30-40 Minutes until Chicken reaches 165° on a Meat Thermometer.
