Low Carb Slow Cooker Pot Roast
If you are unsure what to make for dinner, give this pot roast a try. Toss your roast in first thing in the morning and by dinner you have a whole meal to feed the family.

- Carrots and Potatoes (skip if you are doing low carb)
- Cauliflower Mash
- Etc
So I used carrots and potatoes for my kids. I just chose to not eat them. But I wanted a roast the whole family could enjoy. If you want omit the vegetables if you don’t have anyone who wants to eat them.
How To Make Slow Cooker Pot Roast

Start by dicing up your pot roast into smaller pieces, or leave it whole. Add in your spices and seasonings into the slow cooker.

Top with your onions, carrots, and potatoes. Place lid on the slow cooker and allow it to cook for 8 hours on low.

If you are doing the cauliflower mash, you will follow the directions in the printable recipe card. It will show you how to flavor your mash to make it taste incredible.
Storing Leftovers
One thing we love about pot roast night, is leftovers. The beef stores really well. The vegetables will be a little softer the next time you go to reheat, but they will still taste really well.
Store your roast and vegetables in the fridge for a few days. I always make sure to add in some of the broth to help prevent the roast from drying out.
Can You Freeze Leftover Roast
You can freeze leftover roast. The biggest thing is freezing just the meat. The vegetables would break down too much once they thaw out from being frozen.
You can reheat in the microwave or even on the stovetop. I have saved back leftover meat and it is pretty tasty reheated.

Low Carb Slow Cooker Pot Roast
I love a good Pot Roast! I especially love a Low Carb Slow Cooker Pot Roast!! Give this pot roast recipe a try for dinner tonight.
Ingredients
- 3 lb. Roast Cut into Large Pieces
- 1 lb. Small Yukon Gold Potatoes (Optional)
- ½ lb. Small Baby Carrots
- 1 Red Onion Diced
- 1 - 14.5 oz. Can of Low Sodium Beef Broth
- 1 tsp. Salt
- 1 tsp. Black Pepper
- 1 tsp. Garlic Powder
- 1 Bag of Steamable Cauliflower (12-16 oz.)
- 2 Tbsp. Minced Garlic
- 4 oz. of Chicken Broth
- 4 oz. Cream Cheese
- 4 Tbsp. Butter
- 1 tsp. Salt
- 1/2 tsp. Black Pepper
Instructions
- Cut Roast into Smaller Pieces so they Cook Faster
- Place Roast in the bottom of the Slow Cooker, then Cover with Beef Broth
- Sprinkle Seasonings on top of Roast
- Top with Onion, Baby Carrots, and Potatoes**
- Cook on low 8 hours.
- Serve Roast, Potatoes, and Carrots with a Salad
- Steam Cauliflower in the Microwave according to Package Directions
- Place Cauliflower, Garlic, Broth, Butter, Cream Cheese, Salt and Pepper in a Food Processor
- Pulse in Food Processor until Creamy. You can add Heavy Cream to make them creamier if needed

For a Low Carb Option, Skip the Potatoes and Carrots and serve with Mashed Cauliflower
