Sausage and pepper skillet is a simple dinner that comes together in under 30 minutes. Italian sausage, bell peppers, in a marinara sauce. Hearty, filling, and low carb for a light dinner.

If you have Italian sausage on hand or even a chicken sausage this is a great recipe to consider. I have even done this with the original Johnsonville style Brautwurst.

How to Make Sausage and Pepper Skillet

Dice up your sausage and you will toss it in the pan with some oil and cook for 8-10 minutes.

Next you will remove the sausage and add in your other ingredients and saute the peppers till your liking.

Toss in the sausage and sugar free marinara, and mix until combined!

What to Serve With

  • Low Carb Garlic Bread
  • Salad
  • Steamed or Roasted Veggies
  • Etc

Variations To Recipe

Onions | Consider tossing in some onions and saute when you do your peppers. You could do a sweet onion or even more of a classic white.

Ground Meat | If you don’t have any sausage consider cooking up some ground chicken or ground Italian sausage instead of using link style meat.

Homemade Sauce | If you want consider making your own homemade sauce instead of buying a jar. If you are doing low carb just ensure no sugar added. Or if you are not worried about carbs, then reach for any brand you want.

Serve Over Cauliflower Rice | Consider serving this over cauliflower rice, zucchini noodles, or even spaghetti squash.

Storing Leftovers

If you have leftovers just store them in the fridge for 3-4 days. You can use the leftovers to meal prep with a single serve container. Then grab and go for lunch or a quick dinner to reheat.

This recipe does reheat really well so I think you guys will enjoy it leftover like we do.

In terms of freezing, I have not tried to freeze this. The peppers would become extremely soft as it thaws out. But the meat would stay good. So if you do freeze, I recommend just doing the meat and the sauce.

Ingredients

  • 1 lb. Italian Sausage or Chicken Sausage Links
  • 2 Tbsp. Olive Oil
  • 1 tsp. Minced Garlic
  • 1/2 tsp. Salt
  • 1/2 tsp. Black Pepper
  • 2 Large Red Bell Peppers, Sliced
  • 1/2 Red Onion, Sliced
  • 1/2 Cup Organic Marinara Sauce (No Sugar Added)

Instructions

    1. Slice Sausages into 1/4" Thick Rounds
    2. Grill Sausages in a Large Skillet approx. 8-10 Minutes
    3. Remove Sausages from the Pan and set aside
    4. Add Olive Oil, Minced Garlic, Salt, Pepper, Bell Peppers and Onion to Pan
    5. Saute 5-7 Minutes until Tender
    6. Add the Sausages back to the pan with the Marinara Sauce and Stir to Coat
    7. Heat another 4-5 Minutes and Serve warm!
